#MeatlessMonday

The thing about going meatless - even for a day - is we almost all do it without thinking about it probably at least once a week. But when it's pointed out to us, or highlighted, then we overthink it and get all weird about it. I've had days where, without thinking about it, I have cereal for breakfast, these madras lentils I'm obsessed with for lunch, and noodles with a red meatless or alfredo sauce for dinner. Totally meatless and I didn't even think about it. But on a day where I purposely go meatless I think about meat all day long as if it had been years since I had it. Our brains are weird.

To inspire going meatless just one day a week here's 52 meatless monday recipes - you are set for a whole year's worth!
