My Dad's birthday cake of choice is ALWAYS a lemon cake with an icing that is a longtime family recipe. My sweet for today is that icing. Just the mere thought of it makes my mouth watering. Anything it is on is honestly just the vehicle for the icing. I love it best on lemon cake since that's how I grew up eating it but I have had it on other things and it is always a taste bud pleaser.

Saunders Icing

5 tablespoons flour
1 cup milk
½ cup shortening
1 stick butter
1 cup sugar
Dash of salt
1 teaspoon vanilla

Cook flour and milk together until it starts to thicken.  Cool.
Beat together the remaining ingredients until the sugar is dissolved.  Gradually add the thickened flour-milk mixture and beat until creamy.  Store in refrigerator.  Frosts a 2 layer cake.
