#MeatlessMonday

Today go meatless for your meals - if not for you then for the environment. Did you know that just skipping one day of meat improves our environment in ways that are incomprehensible? So if every person would just skip one day of meat who knows what kind of improvements would happen for our environment. No really, I'm being totally serious. I mean, we can do one day - just a 24 hour period - of no meat right? In the end it's not a matter of can, it's a matter of will we? Google is a great resource for our lives these days - we can just Google "meatless meal recipes" so try that for some tasty dishes or check out my Pinterest board for some that have caught my eye.

There are no shortage of delicious recipes for #MeatlessMonday. These days we aren't limited in the options. Check out some of these recipes, like rosemary balsamic steaks! Steaks? What? Going meatless takes us out of our comfort zones if we are stuck in the traditional ways of thinking about food, as in steaks are always beef (or swordfish). But let's be adventurous, who knows what kinds of amazing flavors we are missing out on!

The thing about going meatless - even for a day - is we almost all do it without thinking about it probably at least once a week. But when it's pointed out to us, or highlighted, then we overthink it and get all weird about it. I've had days where, without thinking about it, I have cereal for breakfast, these madras lentils I'm obsessed with for lunch, and noodles with a red meatless or alfredo sauce for dinner. Totally meatless and I didn't even think about it. But on a day where I purposely go meatless I think about meat all day long as if it had been years since I had it. Our brains are weird.  To inspire going meatless just one day a week here's 52 meatless monday recipes - you are set for a whole year's worth!

I have lots of good intentions for meatless meals, I even have a Pinterest board with yummy looking recipes , but I get lazy. I really want to be better at this so today I'm renewing my efforts to plan for meat free meals. Join me?
